Teaching basic physical and chemical principles, techniques and skills in quality
food preparation.

Twenty Nutrition and Food Sciences students participated in the Rutherford Farm Bureau
Cook-Off and served lunch at the Farm Bureau's monthly meeting. The main criteria
of the competition was to use foods grown in Tennessee. Food served included Italian
Stuffed Green Peppers, Sweet Potatoes topped with Caramelized Onions, Spinach/Sugar
Pea Salad, and Italian Tart topped with Berries and Edible Columbine Flowers (the tart was awarded "Best Recipe"). (Students: Justin Hayes, Stephanie Brown, Jordyn Wood, Vanessa Roegers, and Zachery

Culinary Cook-Off 2010
The NFS Food Principles students challenged each other in a Culinary Cook-off in the
Fall 2010 semester. Groups of students created or selected recipes, prepared them,
and then were evaluated for taste, presentation and creativity. Winners were selected

Tennessee Beef Council
Nutrition & Food Sciences Dietetic Practicum students were awarded educational toolkits
by the Tennessee Beef and Dairy Councils. On October 27, 2010 members with the Beef
Council visited Mrs. Bogle's class to record a segment on how students plans to use their toolkits.

Dr. Janet Colson, program coordinator for Nutrition & Food Sciences, has authored Taking Sides: Clashing Views in Food and Nutrition.
Mrs. Lauren Petr-Cromer received the 2012 Young Dietitian of the Year for the State of Tennessee award.
