Who wrote the MTSU’s Introduction to Nutrition and Wellness?
During summer 2021, MTSU Nutrition faculty (Dr. Sandra Poirier, Ms. Yvonne Dadson, and Dr. Janet Colson) worked to “remix” two existing Open Education Resource (OER) books to create one appropriate for use in MTSU’s NFS 1240 Principles of Nutrition and the high school Nutrition Across the Lifespan class.
The two OER books are:
- The University of Hawai’i at Manoa’s 2020 Human Nutrition
- Lane Community College (OpenOregon) 2020 Nutrition: Science and Everyday Application

The Dual Credit Challenge Exam
High school students may take the Dual Credit Challenge exam after completing the secondary Nutrition Across the Lifespan class. Cost of the exam is $60 per students. Students who pass the exam will earn credits for the 3-hour NFS 1240 Principles of Nutrition. (The title of this class changes from Principles of Nutrition to Intro. to Nutrition and Wellness effective June 2023.)
Additionally, NFS 1240 is a new General Education class under MTSU's new True Blue Core in the Human Society and Social Relationships category.
