Dr. Colson has spoken nationally on school health and promotion. She teaches Maternal/Child Nutrition, Introductory and Advanced Nutrition courses at the undergraduate level. She has developed ancillaries for publication with McGraw Hill, Pearson, and Cengage publishing. Dr. Colson is the editor of two McGraw Hill books Annual Editions in Food & Nutrition, and Taking Sides: Clashing Views in Food & Nutrition.
